Super simple and low-carb, this keto-friendly omelette wrap is perfect for a quick meal.
Ingredients
- 4 large eggs
- 2 tbsp mixed seeds
- 1 tbsp sunflower oil
- 4 slices cooked ham
- 1/2 orange pepper, sliced
- 30 g rocket leaves
- 2 tbsp creme fraiche
- 2 tbsp parsley, chopped
- salt
- freshly ground black pepper
Method
Step 1.
Beat the eggs with the seeds and a big pinch of salt and black pepper.
Step 2.
Heat a few drops of oil in a non-stick frying pan. Pour in a quarter of the egg mixture and swirl to coat the base of the pan. Cook for 30 seconds or until set around the outside, then carefully turn the omelette with a spatula. Cook the other side for 30 seconds, then slide it onto a plate. Repeat to form four thin omelettes.
Step 3.
Top each omelette with a slice of ham and a handful of rocket leaves. Add a dollop of creme fraiche and a sprinkle of parsley to each one, then roll up and serve.
