Porridge is a traditionally popular breakfast for good reason – it is nutritious, comforting and fills you up on a chilly morning. Oats are great source of vitamins, minerals, fibre and antioxidants.
Ingredients
- 180 g porridge oats
- 1 l milk
- 1 pinch ground cinnamon
- 1 dash vanilla extract
- 3 tbsp honey
- 150 g mixed berries; e.g. strawberries, blackberries, blueberries, blackcurrants
- 1 tbsp lemon juice
- 4 tbsp natural yoghurt
- 2 tbsp flaked almonds; toasted
- 2 tsp black and white chia seeds
- 1/2 tsp sesame seeds; toasted
Method
Step 1.
Put the oats, milk, spices and 2 tbsp honey in a saucepan and heat gently. Allow to swell for about 6-7 minutes, stirring, over a gentle heat.
Step 2.
Slice the strawberries, if using. Mix the berries with the remaining honey and lemon juice in a bowl and leave to steep for about 5 minutes.
Step 3.
To serve, pour the porridge into bowls and top each with a tablespoon of yoghurt. Scatter the berries on top, sprinkle with almonds, chia seeds and sesame seeds and serve.
